Food Adventure 2: Sarma

Hey guys, Mili here! I am going to share with you a traditional Serbian dish called sarma. This translates to cabbage rolls stuffed with a mixture of minced meat, rice and spices. People underestimate the look of the food and never try it. Yes, we hear that we eat with our eyes, but I promise you, this will be worth trying!

This is a Serbian recipe, however there are many variations to the dish as it is a popular food eaten over Europe. It is traditionally served at festivities such as Christmas and Saint days, but because it tastes so good, it is also made as an everyday lunch or dinner and lasts several days.

My recipe:

What you will need:

  •  1 large head of cabbage (1.5 to 2 kg)
  •  1 kg pork minced meat
  •  2-3 tablespoons chopped speck
  • 150 grams of rice
  • 2 onions diced
  • 1 egg parsley
  • 1 teaspoon of Vegeta
  • 1 teaspoon pepper
  • 2 tablespoons paprika
  • Dried pork ribs

Method:
Dice the onions and finely chop the garlic, cut up the speck
Heat oil in a pan and saute the onions then add the minced meat, garlic and speck
While mixing the meat break up the chunks of meat so the pieces are small, then add the spices and adjust till you are happy with the taste
When the meat is cooked, add the rice and stir through then add the paprika
Do not over salt the meat because the cabbage is already very salty
Before you stuff the cabbage leaves, allow the mixture to cool
Once the meat is cool, refer to the image below to aid you in rolling the sarma
Stack the sarma in a deep pot into 2-3 layers, depending how large your rolls are
Add the pork ribs in between the sarma rolls and add water to just cover the sarma
Put to cook on a low heat for 2 hours
